Pink Ribbon Girl's Night Out (part 1) - Chocolate Cupcakes with Pink Frosting


In support of National Breast Cancer Awareness month, Little Organics hosted a Pink Ribbon Girl's Night Out Fundraiser last night.  There was fun and there was food and it was wonderful to see so many people generously donate their time and money in support of a fantastic cause. 

When Little Organics approached me to prepare desserts for the Girls Night Out, I was more than happy to help out! Dessert could be anything I wanted it to be so it was time for me to think pink!  Not all that hard for me to do since I love making pink desserts!  I know its terribly cliched, but I wanted to make something very "girly", which led me to think of cupcakes, and who doesn't love chocolate, so these chocolate cupcakes with vanilla pink frosting was a natural choice for me.
I went to my favourite chocolate cake recipe (black magic cake), which not only tastes fantastic but is unbelievably quick and easy to make!  I baked these the night before the event and having finished up late at work that night, I must admit, the idea of kicking my feet up on the couch was much more enticing! But when I started baking, the longest part of the process was getting all the ingredients together! This cake is literally one of those bang all the ingredients in a bowl together, whisk for a few seconds, and bob's your uncle kind of cake! Being cupcakes as well, they don't take nearly as long in the oven which was even more perfect for me that night!
So as these were cooling, I got to making a simple vanilla buttercream frosting which I of course coloured pink.  As I saw the mountain of cupcakes building up with piped pink swirls, it looked so wonderfully girly and I knew that these would look great on the sweets table at the event.  
All in all, it was a successful evening and a big congratulations to Little Organics for their first event management success!
